| Turkey Croquettes Philadelphia Style | |
When Thanksgiving or Christmas dinner is over and everyone has lots of turkey left over, here's a suggestion for how you can use that left-over turkey meat. My grandmother, born and raised in the Philadelphia area, made the most delicious turkey croquettes. I am delighted to share the recipe and step by step visual instructions.
Let's start with the basic ingredients which you can print out and use to follow along with the photos which were taken by your Guide. You will need to adjust the proportions of this recipe depending on how much ground meat you have. For example if you have 5 cups of meat you need to double all of the other ingredients.
Croquettes
2½ cups ground, cooked
turkey (you can also use beef, ham, lamb, veal or chicken)
1 cup Thick White Sauce (see below)
2 tablespoons chopped parsley
1 tablespoon dried minced onion
½ teaspoon lemon juice
salt
flour
dried bread crumbs
oil for deep frying
Thick White Sauce
2 tablespoons salted
butter
2 heaping tablespoons all-purpose flour
½ teaspoon salt
dash pepper
dash paprika
1 cup whole milk
