Turkey Croquettes Philadelphia Style - Page 4

Mix the ground turkey, onion, parsley and lemon juice. Be sure to mix all of these ingredients well. Once this is done, set this aside while we make our white sauce.

For the white sauce you will need salted butter, flour, salt, pepper, paprika and whole milk. Do not use unsalted butter or reduced fat milk. You need the cream in the milk to help thicken the sauce. Remember to determine how much sauce you will need based on how many cups of meat you have measured.

In a saucepan, you should first begin by melting your butter.

Once the butter has melted, slowly add the flour. You want to create a thick, smooth roux.
